16 fresh lobster ravioli
1 lobster or 250 g lobster meat
250 g ricotta
1 shallot, finely chopped
1 tbsp butter
1 tsp lemon zest

Salt & white pepper
For the Champagne beurre blanc
200 ml Champagne from Legras & Haas
100 ml white wine
2 shallots, finely chopped
150 ml fish stock
200 g cold butter, diced
1 tsp lemon juice
Salt & white pepper
For plating
30 g Santos Gourmet Ossetra caviar
Fresh chives or chervil
Edible flowers (optional)
A few small herb leaves

1. Prepare the lobster filling
Gently sauté the shallot in a little butter until translucent
Finely chop the lobster meat and combine it with the ricotta
Add the shallot, lemon zest, and chives
Season with salt and white pepper
Chill the mixture
2. Fill and cook the ravioli
Fill the ravioli with the lobster mixture or use ready-made fresh lobster ravioli
Cook gently in lightly salted water for 3–4 minutes
Lift out carefully and keep warm
3. Prepare the Champagne beurre blanc
Bring the shallots, Champagne, and white wine to a boil in a small saucepan
Add the fish stock and reduce the liquid to about one third
Lower the heat and gradually whisk in the cold butter
Continue whisking until the sauce is smooth and silky
Season with lemon juice, salt, and white pepper
Do not let it boil again
4. Plating like a gourmet restaurant
Spoon some Champagne beurre blanc onto warm plates
Place the lobster ravioli on top
