Ingredients (4 servings)

  • 8 langoustines, thawed overnight
  • 50 g Ossetra caviar
  • Olive oil
  • White wine
  • 3 garlic cloves
  • 1 lime
  • 100 g kataifi pastry
  • 1 carrot
  • 2 celery stalks
  • 8 shallots
  • 1 tbsp tomato paste
  • 1 bay leaf
  • A splash of brandy
  • 4 tbsp mayonnaise
  • 1 ripe avocado
  • 2 sprigs coriander or parsley
  • 2 cherry tomatoes
  • Sorrel
  • Frisée lettuce
  • Salt & pepper

Preparation

1. Prepare the langoustines

Twist off the heads and keep the shells for the crustacean stock. Carefully open the shell and remove the meat. Remove the intestinal vein from the back.

2. Make the crustacean stock

Roast the shells lightly in a pot. Add garlic, shallots, carrot and celery. Stir in tomato paste and deglaze with white wine and brandy. Add bay leaf and water and simmer gently.

3. Langoustine tartare

Finely dice four langoustines. Confite in olive oil at about 50–60 °C with garlic and lime zest for about 10 minutes. Arrange as tartare.

4. Fried langoustine

Wrap the remaining langoustines in kataifi pastry. Deep-fry until golden brown and drain on kitchen paper.

5. Crustacean mayo

Mix mayonnaise with a little reduced crustacean stock and lime zest. Season with salt and pepper.

6. Guacamole

Mash the avocado and mix with lime juice, chopped coriander, diced tomatoes and olive oil. Season with salt and pepper.

7. Plating

Place frisée lettuce and sorrel on a plate. Add the langoustine tartare and top with Ossetra caviar. Serve the fried langoustine alongside with crustacean mayo.

For the best flavor balance:

Use less salt and add more premium caviar instead.
